Boil the quail eggs and peel them.
In a bowl, combine the minced meat, mustard, dried onion, finely chopped garlic, and parsley, 2 chicken eggs, and 3 tablespoons of breadcrumbs. Season with salt and pepper.
Mix thoroughly. Divide into 24 portions.
Wrap the eggs in the minced meat: take a piece, flatten it into a patty, place an egg in the center, and wrap it up.
Next, perform a double breading.
Beat the egg with a fork and 3 tablespoons of cold water.
Bread the balls in flour, dip in the egg, bread in breadcrumbs, dip again in the egg, and finally bread in breadcrumbs.
This breading will help the balls maintain their shape and retain all the juices while frying.
In a deep small pot, heat the oil to 170 degrees. It is important not to overheat the frying oil. Fry the balls in the oil until golden-brown. Remove with a slotted spoon and place on paper towels to absorb excess fat.
Place the balls on a baking sheet and send them to a preheated oven at 180 °C for 10 minutes.
Serve.
