Notes on ingredients:
Apples. Best are apples with fairly firm flesh that doesn’t turn to puree when baked — for example, Golden Delicious or Granny Smith.
Honey. A universal choice for this recipe is linden (lime) or mixed floral honey. It gives a noticeable but not overpowering honey aroma. If you want a stronger honey flavor, you can use buckwheat honey.
The honey in this recipe is heated, so you can use either liquid or crystallized honey.
Oil. This cake uses different fats — refined vegetable oil for the batter and butter for the top. Use any vegetable oil you prefer, or replace it with melted butter. The butter for the caramel topping should have at least 80% fat.
Sugar. Regular white sugar is perfectly sufficient here. Brown sugar will be masked by the honey and spices.
Sour cream. Fat content is not critical. You can substitute thick plain yogurt.
Flour. First-grade flour with 10.5 g protein per 100 g is more than enough. If you have cake flour, it works well too. Strong bread flour is best left for bread.
Spices. The cake will taste and smell best with the full set of spices listed in the ingredients. If your options are limited, remember that cinnamon and ginger are essential in this cake. Nutmeg and cloves can be skipped, although that will slightly simplify the aroma.
If you have a ready-made spice mix for gingerbread or pumpkin pie, you can use it.

Pour melted butter into the pan and sprinkle sugar on top.
Peel the apples and cut them into wedges. Arrange them on the bottom of the pan.
Make the batter. Combine eggs, vegetable oil, white sugar, sour cream and honey. Whisk until smooth.
Add flour sifted with baking soda and spices, and mix the batter.
Pour it over the apples in the pan and spread evenly.
Place in an oven preheated to 180°C and bake until a toothpick comes out clean, about 35 minutes.
Remove, let stand for about 10 minutes, then invert the pan onto a plate and carefully remove the cake.
Cool and serve.
