Finely chop the onion, garlic and bacon.
We cut the chicken into portions. If we use hams, we cut them into a thigh-shin.
Cut the mushrooms into quarters.
Heat 2 tablespoons of vegetable oil in a frying pan over high heat. In several sets, fry the chicken until golden brown on all sides.
Transfer to a pot or saucepan, in which we will stew.
Reduce the heat to medium, put the onion in the pan. garlic and bacon, stir-fry for 4-5 minutes. We put it in a pot with the chicken. Pour the wine into the pot and cook over high heat until the liquid has evaporated.
Add the mashed tomatoes, sugar, salt, bay leaf and herbs, pour in 0.3 cups of cold water and bring to a boil.
Simmer for 20 minutes. Then add the mushrooms, mix and cook over low heat under the lid for another 5-7 minutes. Remove the oregano, rosemary and bay leaf, add salt to taste, season with pepper and serve.
