Potatoes. It is best to use high-starch potatoes for mashed potatoes – they give the most airy and non-sticky mash.
Butter. In this case, a fat content of 72% and above is suitable. It is better if the butter is at room temperature before adding to the mash.
Milk. The fat content is not very important in this case. It is better to add warmed milk to the mash for better consistency.
Meat. As I mentioned in the dish description, a classic shepherd's pie is made with lamb or mutton. In this recipe, I used beef, which is, of course, much more widely available and more versatile in taste. But if you have good lamb at your disposal, you can certainly use it. Instead of chopped meat, which I used, you can use minced meat – it will take less time to prepare.
Peas. For this dish, you need either fresh or frozen peas. Canned peas give a different taste, so it’s better to save them for other dishes.
Onion and carrot. Basic aromatic vegetables. We take the most ordinary carrot and regular onion.
Tomato paste. Gives a characteristic tomato flavor and sweetness. If you don’t have paste, you can replace it with tomatoes in their own juice or tomato passata – in case of substitution, add 400 g right away and reduce the amount of water for stewing.
Let's move on to cooking.
Peel the potatoes and boil them in salted water until ready.
Finely chop the onion and carrot. Cut the meat slightly larger than for tartare – about cubes with a side of 0.5-0.7 cm.
In a saucepan over medium-high heat, sauté the onion and carrot, stirring, for about 3-4 minutes.
Add the meat.
Fry, stirring, until it is no longer pink on the outside.
Add finely chopped garlic and tomato paste, mix and cook for a couple of minutes.
Add water and salt to taste. Stew until the meat is tender; depending on the cut chosen, this may take 1-1.5 hours. It will be faster with minced meat.
At the very end, add the peas.
Mix, cover with a lid, and remove from heat.
Add butter and milk to the potatoes, and make the mash.
Distribute the meat stew into portioned pots.
Top with mashed potatoes – I do this with a pastry bag.
Place in a preheated oven at 200 degrees under the grill and bake for 10 minutes, until golden brown.
