Plums. The ideal option is plums of the Hungarian variety or prunes. They have a fairly firm flesh, plus they separate perfectly from the pit. If you have such plums, frozen in halves, they will also work, but they need to be thawed beforehand.
Variations: As I mentioned in the preface, this pie can also be baked with other fruits or berries – apples, pears, peaches, cherries, blueberries, raspberries.
Yogurt. Any natural yogurt without additives is suitable. Depending on the situation, you can replace it with sour cream.
Butter. Here, butter is used, with a fat content of 72% and above. Before preparation, the butter should be soft but not melted.
Eggs. The recipe is designed for medium-sized eggs of caliber C-1 or M. One such egg without the shell weighs about 50-55 g.
Ideally, the eggs should be at room temperature before being added to the dough. If you don't have time to let the eggs warm up naturally on the counter, you can place them in hot tap water for 15 minutes.
Sugar. We use regular white sugar. It’s better if it is fine – this way the crystals will dissolve faster and better in the dough.
Flour. The recipe is based on regular premium flour with about 10% protein. Alternatively, you can use so-called cake flour with about 8-9% protein. It will give a slightly more crumbly texture. You will need a little more of this flour than indicated in the recipe. Strong bread flour is definitely not suitable here.
Cinnamon. Adds a spicy accent that perfectly complements the baked plums. It can be omitted, but it is much more aromatic with it.
Now let's move on to the preparation.
Cut the plums in half and remove the pits.
Prepare the dough. Beat the butter with sugar until creamy.
Add the eggs one at a time, beating well after each addition. Add half of the sifted flour mixed with baking soda and baking powder, and knead. Add vanilla sugar and salt, then add yogurt and knead again. Add the remaining flour and knead the dough.
Place 2/3 of the dough in a greased mold and level it. Place the plums on top of the dough, sprinkle with sugar and cinnamon.
Spread the remaining third of the dough and level it.
Send it to a preheated oven at 180 degrees. Bake until a toothpick comes out clean, about 40 minutes.
Cool and serve.
