Cream. The fat content of the cream for this ice cream should be at least 30%. You need whipped cream specifically, as it will create a light consistency. Additionally, due to the higher fat content, the size of the ice crystals in the ice cream will be smaller, resulting in a more pleasant and smooth texture.
Caramel. I used homemade salted caramel according to this recipe. If you have store-bought, that's great too. If you don't have any caramel options at all, but have condensed milk, use that, whipping it with butter in a ratio of about 2 to 1 (2 parts condensed milk + 1 part butter). The butter should be at room temperature, soft but not melted.
Coffee. Here I used natural coffee ground very finely, without heating the cream. If you want a more intense coffee flavor, you can brew the coffee in hot cream, strain it, cool it, and then whip it (for example, as in this recipe).
Instant coffee, in my opinion, will cheapen the taste of this ice cream.
Condensed milk. Just take quality condensed milk.
Let's move on to the preparation.
Combine well-chilled cream, condensed milk, and coffee.
Whip with a mixer until you get a light airy mass.
In a container, place a third of the mixture at the bottom. On top, randomly spoon half of the caramel. If it has been stored in the refrigerator, it's better to take it out in advance and let it sit at room temperature to soften for at least 20 minutes.
Gently stir with a sushi stick (or another convenient tool for you – even the handle of a fork)), creating a marble pattern.
Add the second third of the creamy mixture, repeat the caramel steps. Cover with the remaining creamy mixture and smooth it out.
Cover with a lid or plastic wrap and place in the freezer until completely frozen. This will take about 2-3 hours.
Before serving, let the ice cream sit at room temperature to make it easier to portion.
