Source: https://www.vkusnyblog.com/recipe/xolodnik-na-kefire/ Boil the beetroot, grate it on a coarse grater, and place it in a pot.
Grate the cucumber as well.
Finely chop the herbs. Combine everything in the pot and pour in the kefir. If the kefir is too thick, it can be diluted with cold boiled water or mineral water. Add salt to taste.
Boil the eggs hard. Then either chop them and add to the pot, or cut them in half and place one half in each bowl for serving.
Serve with boiled or fried potatoes.
