Yogurt chia pudding with strawberries on the Delicious Blog

      Chia seeds. For about 10 years now, they have been a trendy superfood, rich in fiber, protein, and antioxidants. From a culinary perspective, in this dessert, it acts as a thickener and as a textural component. There is nothing to replace it. Look for it in health food sections or specialized online stores.

      Yogurt and milk. The base for the pudding, which is thickened by chia. In my recipe, they are in a proportion that gives an average thickness consistency.

      It is better to use thick Greek yogurt without additives. The fat content of the milk does not matter. Alternatively, you can use plain drinking yogurt without additives instead of this mixture.

      Powdered sugar. In cold desserts, I prefer to use it because powdered sugar dissolves faster and better than granulated sugar and does not leave unwanted crunchy grains.

      The amount of powdered sugar can be adjusted to taste.

      Strawberries. For the berry coulis, you can use either fresh or frozen strawberries from your stock. If you are making this pudding out of season, you can replace the strawberries that are simply chopped with bananas or kiwis.

      Variations. This pudding will be good with raspberries, blueberries, peaches, apricots, and nectarines. I recommend straining raspberry puree through a sieve after blending to reduce the number of seeds that get stuck in your teeth.

      Now let's move on to the preparation.

      Combine yogurt with milk and powdered sugar, mixing until smooth. Add chia and mix again. It is important that the seeds are well distributed and do not clump together.

      Set aside for 15 minutes, then mix again and place in the refrigerator overnight.

      The next day, prepare the berry coulis.

      Combine strawberries for the coulis with powdered sugar and puree with a blender.

      Chop the other berries into pieces.

      Distribute the pudding into glasses, top with coulis and chopped strawberries.

      Serve.
