      Kefir. The main liquid acidic ingredient. Fat content is not important. You can substitute it with thick buttermilk or plain liquid yogurt.

      Oil. Any refined vegetable oil is suitable. You can replace it with melted butter (82%), you will need 90 g of it, while subtracting 20 g of kefir.

      Eggs. Use a standard medium egg of size C-1 or M, which weighs about 50-55 g without the shell.

      Sugar. Believe me, it is really needed in non-dessert muffins)) For flavor balance. Regular white refined sugar is suitable.

      Corn flour. Here, essentially, polenta is needed – that is, not finely ground flour and not grits.

      Wheat flour. Here we take regular premium flour with about 10% protein.

      Cheese. Almost any semi-hard cheese with a pronounced flavor is suitable for these muffins – for example, cheddar, gouda, emmental, or even the most ordinary "Russian".

      Pepper. For a spicy filling in these muffins, pickled jalapeño pepper is used. It is not hellishly hot, plus it has acidity from the marinade, which is good for flavor contrast. Fresh hot pepper is a worse option, it will give more burn than flavor.

      And yes, the amount of jalapeño in the recipe is average and can be adjusted up or down depending on your love for spiciness.

      Let's move on to cooking.

      In a bowl, combine kefir, egg, vegetable oil, salt, sugar, and paprika. Whisk until smooth.

      Add corn and wheat flour, sifted with baking powder and soda. Knead the dough.

      Add grated cheese, as well as finely chopped pepper and herbs.

      Mix and distribute into forms with paper liners. On top, if desired, you can place a couple of thin slices of hot pepper and a parsley leaf for decoration.

      Bake the muffins in a preheated oven at 180 degrees until a dry match comes out, about 25 minutes.

      Serve warm or completely cooled.
