Chicken. As I mentioned in the recipe description, this marinade can be used not only for drumsticks but also for other parts of the chicken – whole thighs, legs, wings, and even breast fillets.
Sesame oil. It must be toasted – it gives the glaze its characteristic aroma. There is nothing to replace it, just omit it – you will end up with just a basic soy glaze.
Soy sauce. Use regular, not dark.
Sugar. Regular white refined sugar works perfectly. Brown sugar doesn’t make sense here, as it will be lost behind the soy sauce and sesame oil.
Vinegar. The recipe mentions apple vinegar, but rice or wine vinegar – red or white – can also be used.
Mustard. Adds a spicy note and deepens the umami flavor from the soy sauce.
Starch. Acts as a thickener for the glaze – without starch, it won't coat the chicken as well. Cornstarch is used in the recipe because it thickens more gently. If you only have potato starch, use half the amount needed for cornstarch.
For the marinade, mix all the ingredients in a bowl.
Add the chicken drumsticks and mix.
Transfer to a baking dish (leave the marinade in the bowl) and place in a preheated oven at 190 degrees and bake for 30 minutes.
While the chicken is baking, pour the marinade into a saucepan, place it on the heat, and bring to a boil and thicken while stirring constantly.
10 minutes before it's done, start brushing the legs with the glaze using a brush.
Serve with rice or vegetables (I have baked green beans as a side).
