Chop the garlic and herbs finely. Slice the tomatoes and onions.
Place them in a pot or casserole along with the chicken and the other ingredients, except for the ketchup and sugar.
Mix and let marinate for 30-40 minutes.
Remove the chicken and scrape off the marinade. In a skillet over high heat, heat 1-2 tablespoons of vegetable oil and add the sugar. Stir until dissolved. Fry the chicken thighs in two batches until golden brown on both sides, about a minute per side. Make sure the sugar doesn’t burn; if it does, reduce the heat.
Place the fried chicken back into the pot with the marinade, add the ketchup, pour in 300-400 ml of water, mix well, put on high heat, and bring to a boil. Then cover with a lid, reduce the heat to the minimum, and simmer until the chicken is cooked through, about 45-55 minutes.
