      Cheese. Any semi-hard cheese with a more or less pronounced flavor is suitable for the recipe. This can be Gouda, Emmental, Gruyere, Cheddar, and others. Personally, I used yellow Cheddar this time. If desired, you can add a bit (about 20 g) of finely grated Parmesan or Pecorino to enhance the flavor.

      Butter. For shortcrust pastry, the butter should have a fat content of at least 80%. In the case of chopped dough, it should be cold.

      Flour. The recipe is based on regular high-grade flour with a protein content of about 10%.

      Milk. Acts as a binding component. The fat content is not important – essentially, you can replace it with water. And yes, the milk should be cold.

      Worcestershire sauce. It gives the cookies a special taste and aroma. If you don't have it, you can simply omit it, replacing it with an equivalent amount of milk or water.

      Spices. In this recipe, I added a pinch of cayenne pepper to the cookies, which gives a very slight spiciness. You can slightly increase its amount, but without going overboard 🙂 You can also add freshly ground black pepper, dried thyme, or rosemary. In the case of herbs, it will be a completely different aromatic cookie.

      Instead of cayenne pepper, you can use chili powder in the same amount.

      Now let's move on to the preparation.

      In a blender bowl, place the flour, pepper, and butter.

      Grind until it resembles coarse crumbs.

      Grate the cheese on a coarse grater.

      Add it to the butter-flour mixture in the blender and grind again.

      Pour in the milk and Worcestershire sauce, and grind once more. The dough will be in the form of large crumbs that easily form when squeezed.

      Shape the dough into logs about 3 cm thick, wrap in plastic wrap.

      Place in the freezer for 20 minutes.

      Remove the chilled dough from the wrap and cut into slices about 5-6 mm thick.

      Place on a baking sheet lined with parchment paper.

      Put in a preheated oven at 180 °C and bake until golden brown, about 12 minutes.

      Cool and serve.

      Note! These cookies store well at room temperature in a tightly closed container or jar for about 2 weeks.
