Cheese. Any semi-hard cheese with a fat content of 45% and a pronounced flavor is suitable. Cheddar, Gouda, Emmental, Edam, and common cheeses like "Russian".
Eggs. The recipe is based on a medium egg of size C-1 or M. By weight, this is about 50-55 g without the shell.
Flour. We take regular premium flour with a protein content of about 10%.
Spices. The recipe includes ground sweet paprika and cumin in the dough. This is a wonderful spicy combination. But if you don't like cumin, just leave it out. You can use smoked paprika. Additionally, you can add chili powder directly into the dough, which is only used for sprinkling in the recipe. But this is only if you enjoy spicier snacks 😉
Optionally, you can also add ground black pepper to the dough – 1/4 tsp will be enough for a light accent.
Salt. Be careful with this ingredient and adjust according to the saltiness of the specific cheese you are using. The saltier the cheese, the less salt you need to add.
Neither baking soda nor baking powder is used in this recipe. The balls puff up due to the fat in the cheese, which acts as a physical leavening agent.
Let's move on to the preparation.
Grate the cheese on a coarse grater.
Place it in a bowl, add flour, eggs, salt, and spices.
Knead the dough – it will have bits of cheese, be elastic, and not too stiff.
Separate pieces from the dough and roll them into sausages about 1-1.5 cm thick.
Cut the sausages into pieces.
If desired, roll them by hand into the shape of a ball, but this is purely an aesthetic moment.
Fry in well-heated oil (190 degrees) until golden brown.
Transfer to paper towels to absorb excess fat. Then transfer to a bowl and sprinkle with salt, paprika, and chili. Mix well.
Serve warm. These balls pair well with sauces like tartar.
