Beans with Apples and Smoked Paprika on the Tasty Blog

      Beans. You can use any variety of beans in this recipe – red, white, black, black-eyed, and others. The most convenient option is ready-made canned beans. Using them significantly reduces cooking time. But if you wish, you can certainly soak and boil the beans yourself.

      Apples. It’s better if they are sweet and sour varieties, plus it’s important that they do not turn to mush when stewing. Granny Smith apples are ideal.

      Onion. In this case, you can use any type of onion – regular yellow, red, white, shallot.

      Garlic. For this dish, it’s better to use fresh garlic.

      Tomato paste. Choose a paste with the highest percentage of dry matter (usually indicated on the can, the minimum value is 24%, more = better for taste).

      Vinegar. Almost any vinegar is suitable, except for white distilled: apple, rice, red or white wine.

      Soy sauce. Use regular, not dark soy sauce with normal salt content.

      Worcestershire. This ingredient has a unique flavor, so it’s unlikely you can replace it with something similar.

      Mustard. You can use any type of smooth prepared mustard here – Dijon, honey, American, and others.

      Paprika. The highlight of this dish is the smoked paprika. If possible, I highly recommend trying it in this composition. The dish will also be tasty with regular sweet paprika, but it will be much simpler in aroma.

      Let’s move on to cooking.

      Finely chop the onion and garlic. Peel the apples, remove the core. Cut the flesh into cubes about 1.5*1.5 cm.

      Put the tomato paste, mustard, sugar, smoked paprika in a bowl, add vinegar, Worcestershire sauce, and soy sauce.

      Mix well.

      In a skillet or saucepan, heat 2 tablespoons of vegetable oil over medium-high heat. Add the onion and sauté, stirring, until translucent.

      Add the garlic and tomato mixture, pour in water. Bring to a boil and simmer over medium heat for a couple of minutes.

      Add the apples.

      Stir and simmer until almost fully cooked. At the end, add rinsed canned or boiled beans. Salt to taste.

      Simmer until the apples are fully cooked and the beans are heated through.

      Serve.
