Bananas. The rule "the riper, the better" works perfectly for this recipe. Even almost black bananas are suitable. One large peeled banana weighs about 120 g. So for this ingredient layout, you will need 240 g of pure banana pulp.
Chocolate. I recommend using chocolate with a cocoa content of 55 to 72% for these waffles – this will be the most harmonious in taste. Milk chocolate will make the batter too sweet.
Cocoa powder. Here I use alkalized cocoa – it gives a richer color. Regular cocoa powder is also suitable.
Butter. We use butter with a fat content of 80%. You can replace butter with vegetable oil in the banana part. To maintain the proportions of fat and liquid, take 60 g of odorless vegetable oil and 15 additional grams of milk.
Eggs. The recipe is designed for a medium egg, which weighs about 50-55 g without the shell. By labeling, this is C-1 or M.
Sugar. Regular white sugar is sufficient here. But if you want to add a bit of caramel flavor, you can replace white sugar with brown sugar in the banana batter.
Milk. We take regular whole milk with a fat content of 2-3%, lactose-free is also fine. Alternatively, you can make these waffles with drinking yogurt or kefir. In this case, reduce the amount of baking powder to 1/2 tsp, and increase the amount of baking soda to the same 1/2 tsp.
Flour. Regular premium flour is perfect. Strong bread flour is not suitable.
Cinnamon. Adds a light spicy note and pairs wonderfully with both bananas and chocolate. If you don't like cinnamon or you or your family members are allergic to it – just exclude it from the recipe.
Let's move on to the preparation.
We prepare the banana batter.
Place the bananas in a bowl and mash them with a fork or potato masher.
Add sugar, melted butter, and milk. Mix with a whisk until smooth.
Add flour sifted with baking soda, salt, baking powder, and cinnamon. Knead the batter.
For the chocolate batter, place broken pieces of chocolate and diced butter in a bowl.
Set the bowl over a water bath and melt.
Add sugar and mix. Add eggs and milk and mix until smooth.
Add flour sifted with baking soda, salt, cocoa, and baking powder and knead the batter.
Preheat the waffle maker. Spoon both types of batter in a random order.
Bake.
These waffles are delicious both warm and completely cooled.
