Fish. Fillets of any salmonid are suitable – Atlantic salmon, Norwegian trout, chum salmon, coho. Pink salmon is also technically suitable, but its taste and texture will be inferior to that of salmon.
Another option is to prepare fillets of cod, halibut or pike-perch (zander) using this recipe.
Cheese. You need a hard aged cheese like Parmesan. Grana Padano, Džiugas, aged Gouda and even aged cheddar also work.
Nuts. Almonds are the optimal choice in this case. Cashew or pistachio variants will also be good.
Dill. This herb pairs excellently with salmon and gives dishes a distinctive note. It should not be replaced with other herbs.
Now to the preparation.
Chop the herbs finely. Grate the cheese on a fine grater. Pour boiling water over the almonds, leave for 10 minutes, then remove the skins and shave them with a knife. If you have almond flakes like I do, the above steps are not necessary.
Cut the fish into serving pieces, salt and pepper, and place on a baking sheet. Sprinkle with a mixture of grated cheese, herbs and almonds.
Put in the oven and bake for 15–20 minutes at 190°C.
