      Notes on ingredients:

      Beans. Both red and white work. You can use canned beans, as I do, or soak and cook dried beans. The first option is faster and muuuuch more convenient.

      If you cook your own beans, to adjust the consistency add cold boiled (cooled) water instead of the cooking liquid if necessary.

      Tahini. An Eastern sesame paste sold in large supermarkets and in Indian, Iranian, and Turkish shops. If you can't buy tahini ready-made, make it at home – here's a recipe.

      Garlic. The recipe specifies a moderate amount of garlic. If you like your hummus stronger, you can add more.

      Olive oil. Used as a flavoring for serving. You can omit it if you wish, but I strongly recommend keeping it 🙂

      Now for the preparation.

      Drain the liquid from the beans, but do not discard it — save it; you'll add it to the mixture if it seems too dry.

      Put the beans, tahini, garlic, and salt into a bowl.

      Process in a blender.

      Add the reserved bean liquid as needed during blending.

      Serve with fresh vegetables, pita, or tandoor flatbread.
