Marbled brownies with peanut butter on Vkusny Blog

      Notes on ingredients:

      Chocolate. Dark chocolate with 50–60% cocoa works best. You can use a more bitter one, up to 72%, if you like. I don't recommend milk chocolate here — it will be too sweet.

      Butter. For brownies use butter with at least 72% fat. I do not recommend substituting vegetable fat — the taste and texture will suffer.

      Eggs. Use medium eggs size C-1 or M weighing 50–55 g. It's better if they are warm before adding to the batter.

      Sugar. Regular white sugar works great. It's not necessary to choose the finest granulated variety. Even fairly coarse sugar dissolves well in the batter.

      Flour. Use regular all-purpose flour. And yes, you need only a small amount.

      Cocoa powder. I use alkalized cocoa, but regular cocoa powder will do. The difference is it will give a less intense color than alkalized cocoa. Nesquik and similar instant cocoa drink mixes are not suitable here.

      Coffee. I use natural ground coffee here — in my opinion it gives the best flavor. If you decide to use instant coffee, use 1 tsp.

      Let's move on to the preparation.

      Melt the chocolate with the butter in a double boiler or in the microwave.

      Add the sugar and mix. Then add the eggs and mix again.

      Add the salt and the flour sifted together with the cocoa and mix into a batter.

      Transfer it to a baking pan lined with parchment.

      Mix the peanut butter with powdered sugar.

      Spoon it on top of the chocolate batter.

      Make random swirls with a chopstick or the back of a spoon.

      Bake in an oven preheated to 160°C for about 40–45 minutes. The edges of the dessert should be completely set.

      Remove the brownie pan from the oven. Let it cool in the pan to room temperature, then transfer to the refrigerator to stabilize for 3–4 hours.

      Remove the cooled brownies from the pan, peel off the parchment, cut into portions and serve.
