      Notes on ingredients:

      Beef ribs. Choose ribs with as much meat on them as possible.

      With this recipe you can braise not only ribs, but other tough cuts of beef as well — for example, shanks or brisket.

      Onions. Regular yellow onions work great, but you can substitute red onions if you prefer.

      Wine. Use a dry red wine such as Merlot or Cabernet. Yes, during long braising the alcohol evaporates and only the wine flavor remains.

      Tomato paste. It gives the most concentrated tomato flavor.

      Cooking liquid. In this case water is enough for braising, because the dish cooks for a long time and is made from meat high in collagen, so the sauce has time to absorb maximum flavor from the meat. Broth is definitely not necessary.

      Now to the preparation.

      Coarsely chop the onions and carrots. Finely chop the garlic.

      Heat a couple of tablespoons of vegetable oil in a frying pan over high heat and quickly brown the ribs on all sides until a golden crust forms, literally within a couple of minutes.

      In a heavy-bottomed pot over medium-high heat, heat 1 tbsp of vegetable oil. Add the onions and carrots and sauté, stirring, until golden, about 3–4 minutes.

      Add the tomato paste and cook, stirring, for 1–2 minutes, until the characteristic intense tomato aroma appears.

      Pour the wine into the pot and stir vigorously with a spatula, scraping up any browned bits from the bottom. Add the garlic and the browned ribs, season with salt to taste, and add enough water to cover the contents of the pot to three-quarters of the height (the ribs will protrude slightly).

      Bring to a boil and braise over the lowest heat, covered, until tender. Depending on the starting meat, this may take from 1.5 to 3 hours.

      Remove the finished stew from the heat and let it rest, covered, for 15–20 minutes.

      Serve.
