Notes on ingredients:
Condensed milk. Use simply the highest-quality condensed milk—the kind you enjoy eating on its own. I, of course, use Belarusian. Boiled condensed milk does not work in this case—it will give a different taste and consistency.
Cocoa powder. I use alkalized cocoa—it gives a deeper color and flavor. Regular cocoa powder also works. Instant drink mixes like Nesquik are out—they definitely don't work.
Butter. For best results use unsalted butter with 80% fat or higher.
Confectionery sprinkles. This is the classic ingredient for brigadeiro. But if you don't like this option, you can roll the candies, for example, in chopped roasted hazelnuts. That won't be classic, but it will be a very tasty variation. Desiccated coconut also works as an alternative.
Salt. Here it is needed to balance the flavor—the candies become less cloying with it.
Let's move on to the preparation.
Put the condensed milk, butter, salt and cocoa into a saucepan.
Put over medium heat and cook, stirring constantly, for about 10 minutes, until the mixture thickens.
Transfer the mixture to a cold bowl and cover the surface with plastic wrap. Cool completely.
Form the mixture into balls and roll them in the sprinkles.
