Notes on ingredients:
Matcha tea. The primary flavor and aromatic ingredient of this ice cream. It cannot be substituted. Look for it in online stores and tea shops. Nowadays it is no longer a rare ingredient.
Milk and cream. You can adjust the fat content of the milk-and-cream mixture to your taste. The richer the base, the more velvety and smooth the ice cream’s texture will be — and the better the flavor. You can change the milk-to-cream ratio to achieve this.
Sugar. Use regular white sugar. In this case, its granule size doesn't matter.
Egg yolks. Count on yolks from medium eggs — size C-1 or M. By weight that's 18–20 g each. Whole eggs are not suitable.
Let’s move on to the preparation.
Prepare the base — crème anglaise.
Mix the milk with the cream.
Bring to a boil and remove from the heat.
Mix the matcha with 3 tbsp of boiling water and add it to the milk mixture. Stir.
Whisk the yolks with the sugar until you get a light, fluffy mixture.
Slowly, in a thin stream and whisking constantly, pour in the milk-and-cream mixture.
Pour the mixture into a small saucepan and place over low heat. Cook, stirring constantly, until it reaches a custard-like consistency that coats the back of a spoon.
Pour everything into a thin-walled bowl and set it into another bowl filled with ice water (to cool quickly).
If time allows, you can cool the mixture in stages — first to room temperature, then finish cooling in the refrigerator.
Pour into an ice cream maker and churn according to the manufacturer's instructions. For me it takes about 25–30 minutes. The mixture should reach a consistency like this:
Next transfer the ice cream to a container and place it in the freezer for one to two hours to fully set.
Serve. My version is with fresh raspberries, lemon curd and grated lemon zest.
