      Ingredients Notes:

      Onion. It’s best to use red salad onion. It is milder in taste compared to regular yellow onions. Some make the jam with white salad onion. It’s okay flavor-wise, but the color is less vibrant and largely depends on the wine used.

      Wine. Only dry red wine. Optimal varieties are Cabernet Sauvignon and Merlot. There’s no need to buy expensive options, but a budget-friendly wine should still taste good.

      Honey. It gives a characteristic honey flavor. I recommend adding linden or mixed herbs honey. Robust buckwheat or chestnut honey may be too strong.

      If you don’t like honey in general, you can replace it with the same weight of sugar.

      Vinegar. It imparts a distinctive taste and acidity that balances the sweetness. The recipe calls for red wine vinegar, but white wine or apple vinegar can be used as well. Another option is balsamic vinegar, which adds a special note to the marmalade.

      Sugar. Jam without sugar isn’t truly jam. Use regular white sugar; it’s more than enough here.

      Thyme. You can use fresh or dried. Fresh is preferable.

      Proceeding to the preparation:

      Slice the onion into thin rings or half-rings.

      In a heavy-bottomed pot, heat olive oil over medium heat. Add the onion.

      Simmer in oil, stirring occasionally, for about 5 minutes until it becomes soft:

      It should be stewed, not fried. No golden pieces.

      Add sugar, honey, coriander, thyme, wine, and vinegar.

      Mix and simmer uncovered on the lowest heat, stirring occasionally, for about 1.5 hours.

      The onion should become tender, and the mixture should have the consistency of jam.

      Cool the marmalade and use as desired. It can be canned in sterilized jars for storage.
