      Notes on ingredients:

      Zucchini. In this recipe, you can use any variety of zucchini — including zucchini, yellow, salad, etc. The main thing is that the zucchini is young.

      Flour. You can use any wheat flour for the coating, except whole grain — it gives a specific taste that isn't suitable here.

      Breadcrumbs. I use regular fine breadcrumbs. If you want a more voluminous, light crust, use Japanese panko breadcrumbs.

      Eggs. Instead of whole eggs, you can use only whites. Conversion figures: 1 medium white = 30g, 1 medium whole egg ≈ 55g.

      Parmesan. You can use any aged cheese to your liking — Parmesan, Grana Padano, Pecorino, etc. Or just omit this ingredient.

      Let's proceed to cooking.

      Cut the zucchini into strips. Salt them.

      Beat the egg with a fork. Mix breadcrumbs with finely grated cheese.

      Dredge the zucchini in flour.

      Then dip into the beaten egg.

      And coat in the breadcrumb mixture.

      Repeat with all zucchini pieces.

      Fry in deep fryer over medium-high heat until golden brown.

      Transfer to paper towels to absorb excess oil.

      Serve hot.
