      Ingredient notes:

      Cottage cheese. Ideally, use cottage cheese in slices—it should be grainy and soft, which gives the perfect consistency. Using smoother cottage cheese in bricks results in a worse outcome, in my opinion.

      Butter. For this recipe, it's best to use butter with at least 80% fat content. It will make the cookies the most crispy on the outside.

      Flour. The recipe is designed for regular premium wheat flour with about 10% protein.

      Sugar. Use regular white sugar. I recommend choosing a finer grind if possible.

      Let's move on to the preparation.

      Mix room temperature butter with cottage cheese.

      Add baking powder and flour, knead the dough (you may need less flour than specified, so monitor the consistency).

      Roll it out into a sheet about 0.5 cm thick and cut out circles using a cutter or a glass.

      Dip each circle on one side into sugar.

      Fold it sugar side in, then dip one side of the folded circle into sugar again, fold it sugar side in once more. Alternatively, dip both sides in sugar and fold into quarters for simplicity. However, in this case, the sugar underneath might start to burn before the cookies are cooked.

      Place the tray in a preheated oven at 190°C for about 20 minutes.

      This type of cookie is delicious with milk or tea.
