Ingredient notes:
Peaches. The ideal choice is ripe and sweet seasonal peaches. A winter option is canned peaches. They will have less aroma, but the pie will still be tasty. With frozen peaches, it depends on the quality of freezing, but most often they become too soft and watery, which is not ideal for the dough.
Flavor variations. This pie can be baked with plums, apricots, cherries, blueberries, raspberries, or fresh strawberries.
Eggs. The egg size should be medium, C-1 or M, weighing about 55 g. For better dough consistency, use eggs at room temperature.
Wheat flour. Here, we need regular premium-grade flour with about 10 g of protein per 100 g.
Sugar. Use regular white sugar. It’s best if it’s fine—the crystals will dissolve faster and better into the dough.
Butter. You can use butter with 72% fat or higher.
Let’s move on to the preparation.
Cut the peaches into cubes with sides of 1-1.5 cm. I do not peel them; adjust based on the situation—if the skin is tough or bitter, scald the peaches with boiling water after scoring the skin in a cross pattern, then peel.
Melt the butter and set aside. It should cool to at least 30-35°C.
Beat the eggs with sugar and salt until light in color and volume increases significantly.
Add vanilla and sifted flour with baking powder, mixing gently from bottom to top until evenly distributed and homogeneous.
Set aside 3-4 spoonfuls of batter in a container with the cooled butter and gently mix.
Then combine the butter mixture with the remaining batter and carefully mix, trying to omit as much air as possible.
Add the peach cubes.
Mix and pour into the baking form.
Bake in a preheated oven at 180°C until a dry toothpick comes out, about 30-35 minutes.
Remove the finished pie from the oven and let it sit in the form for 20 minutes. Then remove and completely cool.
