Meatloaf with smoked brisket and sun-dried tomatoes on Tasty Blog

      Notes on ingredients:

      Ground meat. You can choose the meat for the mince based on your taste and availability. I used a mixture—pork and beef in equal parts. You can also use pure beef or pork mince. Another option is ground turkey.

      Brisket. In this case, you can use boiled-smoked or cured-smoked brisket. A suitable substitute is smoked cooked ham.

      Onion. Regular yellow onion is more than enough.

      Garlic. I use fresh garlic in this recipe. If you prefer the taste of dried granulated garlic, you can use that. For the given amount of ingredients, 1/2 teaspoon is sufficient.

      Breadcrumbs. Ordinary fine breadcrumbs are ideal. Panko can also be used, but it will be more expensive.

      Alternative to breadcrumbs – finely chopped oatmeal flakes like “Hercules,” used in a 1:1 weight ratio.

      Sun-dried tomatoes. They add an interesting accent to the roll. Store-bought or homemade are suitable. If you don't have tomatoes, you can experiment with other flavorings—such as olives, caramelized fried onions, and others.

      Herbs. You can choose herbs to your taste. This time I used celery. Parsley and green basil are also good options.

      Let's get to cooking.

      Cut the brisket into not-too-small cubes.

      Place in a bowl with the ground meat, chopped herbs, grated onion, garlic, breadcrumbs, and finely chopped sun-dried tomatoes.

      Add salt and pepper, mix well.

      Form the roll. Place the mince into a sausage shape on a double sheet of foil.

      Wrap in foil and twist the edges to form a cylinder.

      Transfer to a baking sheet and bake in a preheated oven at 200°C (392°F) until done, about 35-40 minutes. In the last 5 minutes, increase the oven temperature to maximum, remove the foil from the roll, and let it brown. Alternatively, sear the roll in a very hot skillet.

      Let it rest for 10 minutes, then slice and serve.

      I served it with homemade mayonnaise with curry.
