Shrimp. Ideally, you need raw large shrimp of any kind – tiger, red, vannamey, etc. If raw shrimp is not available, you can make it with boiled ice cream. But be sure to keep in mind that for them, the fire under the pan should be stronger than with raw shrimp, because you only need to brown the bacon and only warm up the shrimp, which is already ready from the beginning.

Bacon. This refers to the raw smoked brisket, cut into thin slices. It is most convenient to buy already sliced bacon. But if you have a slicer at home, and you have a lot of skill yourself, then you can buy a whole piece of bacon, freeze it and then slice it yourself.

Tomatoes. The sauce recipe is based on tomatoes in their own juice from a jar. Here we need those tomatoes that contain only tomatoes, tomato juice, citric acid, and possibly salt. Canned tomatoes with vinegar, sugar and spices are not suitable.

If desired, you can replace canned tomatoes with fresh ones. For this recipe, take 170 g of tomatoes and punch them with a blender, plus add 30 g of tomato paste for flavor intensity.

Tabasco. You can use any hot chili sauce you like to add spice. Another option is to add “fire” to the sauce – chili powder or flakes.

Sugar. The basic recipe uses ordinary white sugar. If desired, to add a light caramel flavor to the sauce, you can use brown sugar in the same amount.

Garlic. Fresh garlic is the best option in this case.

      We proceed to cooking.

We prepare the sauce. Put the tomatoes and juice in a saucepan. Add sliced garlic, tabasco and sugar. Put on fire, bring to a boil and cook over medium heat for about 5-7 minutes. Remove from heat.

Grind the sauce with a blender until smooth.

Add salt and lime juice to taste. Mix thoroughly and warm up again. Cool it down.

Each shrimp is wrapped in bacon.

Fry over medium-high heat in a greased frying pan until cooked on both sides. For boiled and frozen shrimps, 1-1.5 per side is enough, for raw - 3-4 minutes on each side, but at a slightly lower heat. The time may increase or decrease depending on the size of the shrimp.

Transfer the finished shrimps to a plate and serve hot with sauce and lime wedges.

      Enjoy your meal!
