Strudel with salmon and spinach on the Delicious Blog

      We prepare the dough. To do this, sift the flour into a bowl, make a depression in the center. Pour half an egg, butter and water into it, knead the dough. We transfer it to a floured table and begin to knead, adding extra flour a little at a time. The dough should be soft and not stick to your hands. It will take about 10 minutes in time.

      Wrap the dough in foil and let it rest for at least 30 minutes.

      While the dough is resting, we prepare the filling. To do this, put three cheeses on a coarse grater.

      Cut the fish into slices. If you use fresh spinach, you need to add it. To do this, melt 25 g of butter in a frying pan over medium heat, add spinach and cook, stirring, until soft.  Remove from heat.

      Mix the cheese, fish, spinach and egg. Add salt to taste.

      Next, you need to stretch the dough.

      We put a linen towel on the table and sprinkle it with flour. We put the dough in the center and begin to roll it out with a rolling pin to fit the size of the towel (this is about 50 * 70). As soon as it becomes impossible to roll out for longer, we set aside the rolling pin and begin to pull out the dough with our hands. If the dough is kneaded correctly, it will stretch very well. Therefore, do not be afraid, but still do not make unnecessarily sudden movements.

      A well-stretched dough should be soooo thin. I specially took a colored towel to demonstrate the desired thickness (the pattern on the fabric should show through the dough).

      We place the rectangle of dough with the long side facing us. Sprinkle the dough with breadcrumbs, leaving a couple of centimeters clean on top and bottom and about 15 cm on the right. We put the filling on top of the breadcrumbs.

      Lift the edge of the towel and roll the roll towards the side of the dough that we left free. The roll will roll and curl by itself.

      We pinch the edges of the roll.

      We put it on a baking sheet lined with parchment, lubricate it with melted butter.

      We send it to the oven preheated to 200 degrees for 35 minutes.

      Remove the finished strudel from the oven, let it stand for 10 minutes, then cut into portions and serve, sprinkled with ground sweet paprika (optional), with sour cream sauce and tomato salad.
