Rice. Any long-grain rice is suitable for this recipe. Personally, I like basmati the most because of its special taste.
Dried fruits. The set of dried fruits can be changed to your liking. Raisins of various varieties, dried apricots, dried figs, cherries, and prunes fit perfectly here.
Spices. In this case, I recommend using whole cinnamon and star anise. With them, the taste is more refined and at the same time saturated. In addition, you can simply remove them from the saucepan at any time during cooking, if you decide that they have already given enough flavor.
But turmeric will be best in its ground form.
Onion. Regular onions are more than enough for this dish, but white onions and shallots can be used according to the situation. I do not recommend red in this case, it does not fit into the color scheme of the dish.
Garlic. In this case, only fresh garlic is suitable, it is better not to replace it with garlic powder.
We proceed to cooking.
Finely chop the onion. Garlic is not chopped very finely. Large dried fruits such as dried apricots and figs are cut into small pieces.
Heat 3 tablespoons of vegetable oil in a saucepan over medium heat. Add the onion and fry, stirring, for 3-4 minutes.
Add garlic and turmeric. Stir-fry for 1 minute.
Add the rice and fry, stirring, so that the oil from the saucepan wraps around each piece of rice.
Pour in the broth, add dried fruits, cinnamon, star anise, and salt to taste.
Bring to a boil over high heat, then reduce the heat to a minimum and cook the rice under the lid until tender, about 20 minutes. In the process, add broth or water if necessary.
