Ketchup. This is the base of the sauce, so it is important to use delicious and high-quality ketchup with a natural taste without additional flavor additives such as garlic, herbs or hot pepper.
Onion. For this recipe, it is best to use regular onions or white lettuce onions – they have the least effect on the color of the finished sauce.
Garlic. It is optimal to use fresh garlic. Dry granulated is quite suitable for replacement, but it gives a slightly different taste. When replacing, use 1/2 tsp of dry granulated garlic instead of 3 cloves of fresh garlic.
Sugar. I make this sauce with brown sugar, which gives a light caramel flavor. If you don't have brown sugar, you can use regular sugar, but keep in mind that the taste of the finished sauce will be a little easier.
Vinegar. Almost any vinegar except white alcohol vinegar is suitable: apple, rice, red or white wine vinegar.
Tabasco. Adds spice. If desired, you can replace it with any other hot pepper sauce to your liking. Another option is chili powder.
You can adjust the sharpness to your liking. According to this recipe, the sauce is obtained with a very light spice.
Honey. Here it is better to use honey that does not have a super expressive aroma - for example, lime, mixed grass, acacia. It is better to leave strong buckwheat and chestnut honey for other dishes.
Worcester. This ingredient strongly influences the flavor profile of the sauce, so I would say that it is indispensable here. If you replace worcestershire with soy sauce or completely eliminate it from the composition, the final sauce will turn out to be different.
We proceed to cooking.
Finely chop the onion and garlic.
Heat 2 tablespoons of vegetable oil in a saucepan over medium heat. Add the onion and fry, stirring occasionally, until soft, 4-5 minutes.
Add the garlic and cook, stirring, for another 30 seconds. Add all the other ingredients.
Stir and bring to a boil. Cook on low heat for 2-3 minutes and turn off.
Mix the sauce with a blender until smooth.
Cool, pour into jars. It is stored for a week for sure.
