      Cream cheese. Any Philadelphia-type cream cheese is suitable. As a last resort, you can replace it with a soft curd from a jar, without additives.

      Raspberry. Both fresh and frozen berries are suitable. Frozen food does not need to be thawed beforehand.

      Flour. The usual premium grade with a protein of about 10.5 g per 100 g of product. It can be replaced with the first grade without additional changes to the rest of the recipe.

      Butter. In this case, you can use oil with a fat content of 72% or higher.

      Sugar. For the dough, it is better to use ordinary white sugar with small crystals, which dissolve better and faster in the dough.

      Eggs. The egg size is medium, C-1 or M is about 55 g in weight. For a better dough condition, use eggs at room temperature.

      Cocoa powder. I use alkalized cocoa, but regular cocoa powder is also suitable. The difference will be that it will give a less saturated color than the alkalized one. Nesquik and similar instant cocoa drinks are not suitable here.

      Chocolate. According to the classics, dark chocolate is optimal for brownies. Dessert is also quite suitable, but keep in mind that with it the sweetness will be more intense.

      Vanilla sugar. You can replace it with vanilla essence – 1 tsp. in this case, it will be enough.

      We proceed to cooking.

      We prepare the cheese layer. To do this, mix the cheese, sugar and yolk intensively with a whisk. Set aside.

      Break the chocolate into pieces, cut the butter into cubes. We put it in a bowl, put it on a pot of boiling water and melt it (water bath).

      Add the regular and vanilla sugar, mix and set aside so that the mass cools down a little for about 10 minutes.

      Meanwhile, sift the flour with salt, baking soda and baking powder.

      Add eggs and white to the cooled chocolate mass, mix with a whisk. Gradually add the flour mixture and knead the dough.

      A rectangular or square shape (I have 24 * 24 cm) is greased with vegetable oil and covered with parchment.

      Spread half of the chocolate dough.

      We put the cheese mass on top.

      Cover with the remaining chocolate dough, take a wooden skewer and swipe the dough several times in any direction to create a marble pattern.

      We put raspberries (frozen ones do not need to be thawed beforehand) and heat them in the dough.

      We put the mold in an oven preheated to 160 degrees and bake for about 50-60 minutes. The edges of the finished cake should grip, and the middle should feel dense to the touch, but not firm. If you check with a match, it should come out with a small amount of stuck wet crumbs.

      Cool the cake, remove the parchment, and cut the brownies into small pieces.
