Potatoes. It is best to use the same potatoes that are suitable for mashed potatoes – that is, they boil well. It will turn out soft and friable even when baking. The weight of an average potato is about 100-120 g.
Minced meat. In this recipe, I use mixed minced meat – pork and beef in half. But you might as well make a sauce with pure ground beef or pure ground pork. The option with poultry is also possible, but minced chicken or turkey should not be made from breasts, but from dark meat (because from the legs).
Tomatoes. Tomatoes in their own juice, which are sold in tin cans, are needed here. They contain only tomatoes, tomato juice and citric acid as a preservative. Salt may also be involved. It doesn't matter if these tomatoes are whole or sliced, you will need to chop them anyway.
If you don't have such tomatoes, you can use a blender to punch 350 g of regular tomatoes and add 50 g of tomato paste to them for a more intense tomato flavor.
Onion. Regular onions are suitable for the sauce, but depending on the situation, you can replace it with other varieties – red, white or shallots.
Garlic. Fresh garlic is the best choice in this case. But if necessary, you can use dry granulated garlic. 1/2 tsp. will be enough in this case.
Zucchini. You can use zucchini of any variety – zucchini, light green, yellow and others. According to the situation, you can replace zucchini with champignons – it will also be delicious.
Sour cream. When serving, I recommend using sour cream for freshness. Fat content is at your discretion. Alternatively, you can serve these potatoes with Greek yogurt or labneh. Or do without dairy products altogether.
We proceed to cooking.
Wash the potatoes thoroughly with a brush. We prick it in several places with a toothpick, rub it with salt and vegetable oil.
Each potato is wrapped in a piece of foil.
We send it to the oven preheated to 220 degrees and bake until ready, about an hour. To check, we pierce the potatoes with a wooden skewer – it should easily fit into the potato.
We prepare the sauce. Finely chop the onion and garlic, and cut the zucchini into small cubes.
Heat 1-2 tablespoons of vegetable oil in a saucepan over medium-high heat. Add the onion and fry, stirring, for 2-3 minutes.
Add garlic, herbs of Provence and zucchini and cook, stirring, for another 3 minutes.
Add the minced meat and fry, stirring and breaking up the lumps with a spatula until all the minced meat loses its pink color.
Add the tomato paste and mashed tomatoes along with the juice, add salt and sugar to taste, mix and simmer over medium heat for about 10 minutes.
We unwrap the finished potatoes and remove the foil. We cut it along the tuber and open it, while pressing it with our fingers. Salt it inside. We put it on a plate and put the sauce in the cuts. If desired, add sour cream.
We are serving.
