Peking cabbage (I put only thick parts of the leaves from the base of the head) is also cut into strips crosswise. Finely chop the garlic and ginger, chop the green onion (white and green parts separately).

      Cooking couscous. Pour boiling water over it, add a little salt and cover with a lid. We keep it until all the water is absorbed and the cereal swells.

      Heat 2 tablespoons of vegetable oil in a frying pan over high heat. Add the vegetables and fry, stirring, for 3 minutes.

      Add garlic, ginger and white onion parts. Stir-fry for another minute. Add soy sauce, sugar and sesame oil, heat together for half a minute and remove from heat.

      Place the couscous in a colander to drain the excess liquid, if any. Transfer to the vegetables.

      Stir and serve.
