      Cut the onion into thin half rings.

      Melt the butter in a thick-walled saucepan over medium-high heat. Add the onion and finely chopped garlic and fry, stirring, for about 10 minutes, until the onion turns brownish and caramelizes (not to be confused with burning!). In the process, gradually add sugar.

      Reduce the heat to almost a minimum and fry the onion, stirring occasionally, for another 20-25 minutes.

      Pour the wine and broth into a saucepan, bring to a boil over high heat, then reduce the heat to a minimum and simmer, UNCOVERED, for about an hour.

      During this time, the liquid part of the soup should boil off, and the soup itself, accordingly, become thicker.

      Season the finished soup with salt, add a little sugar if necessary.

      While the soup is cooking, cut the baguette into slices about 1-1.5 cm thick, place on a baking sheet, sprinkle with olive oil and dry in a preheated 200 degree oven for 5-6 minutes.

      Pour the soup into soup tureens, put 1-2 croutons on top of each one (depending on the diameter) and sprinkle with grated cheese.

      We send it to the oven and bake for 5-7 minutes, until the cheese melts and gets a ruddy crust.

      Serve with the remaining croutons.
