      Transfer to a plate.

      Finely chop the onion, carrot and celery.

      Reduce the heat under the saucepan to medium. Add the onion and fry, stirring, for 4-5 minutes.

      Pour in the wine and cook until the liquid has evaporated almost completely.

      We return the pieces of the shank to the saucepan and pour in so much water that it almost completely covers the meat. Add salt to taste, bring to a boil and simmer under a lid on low heat until the meat is soft, about 1.5-2 hours. After the first hour, add the carrots and celery fried for 5 minutes.

      It is better to start trying the meat for softness in advance, because the stewing time may differ from that specified in the recipe.

      For the gremolata, mix finely chopped garlic, lemon zest and parsley.

      Sprinkle the finished ossobuco and let it stand off under the lid for 5 minutes.

      Serve with Milanese risotto or mashed potatoes.
