Butter. Use oil with a fat content of 72% or higher. Margarine is not recommended – it gives a subtle chemical taste that spoils everything. The butter in the recipe comes in a soft form – that is, at room temperature. But not melted!
Sugar. For both the dough and the caramel, it is better to use ordinary white sugar with small crystals, which dissolve better and faster in the dough.
Flour. We take ordinary flour of the highest grade with a protein of about 10 g per 100 g. Strong bread flour is not suitable for this recipe.
Eggs. The size of the egg is C–1 or M. Such an egg weighs about 55 g. For the recipe, take eggs at room temperature. If you don't have enough time for the eggs to heat up while lying on the table, put them in a bowl of hot tap water for 15 minutes.
Cream. This recipe requires cream with a fat content of 30% or higher. Less fatty cream is not suitable.
Nuts. Walnuts, pecans or cashews are the best texture for this cake. Hazelnuts and almonds are better left for other recipes – they are too hard for this.
We proceed to cooking.
We prepare the caramel. Pour sugar into a saucepan and put it on medium heat. Melt the sugar to an amber color, remove the saucepan from the hob, pour in the warmed cream, return to the fire and stir until smooth.
Transfer to a bowl and cool.
For the caramel nuts, we also pour sugar into a saucepan and melt it. Add the nuts broken into medium-sized pieces and mix. Add the butter, mix again and remove from heat.
Transfer to parchment or a silicone mat and cool.
For the dough, beat the butter with sugar until creamy.
Add the eggs one at a time, whisking after each one. Add the flour sifted with baking powder and knead the dough.
Transfer the dough to a pastry bag. We put the layers in the mold: dough, caramel, nuts, dough, caramel, nuts, dough (I baked in two small forms, but this volume of ingredients is well included in the standard "brick" of 30 * 11).
We send it to a preheated 180 degree oven and bake until a dry match, about 40 minutes.
Remove the cupcake from the mold and cool completely.
