Bananas. for this pie, it is better to use unripe bananas with a fairly dense pulp. Bananas that are too ripe are more likely to turn into mashed potatoes when baking a pie. The weight of one banana with a peel is about 200 g.
By analogy with bananas, you can make this pie with other fruits: pears, peaches, apples, apricots and even canned pineapples.
Oil. In this recipe, I use vegetable oil. If desired, you can replace it with melted butter. In this case, use 100 g of butter with a fat content of 82% and reduce the amount of sour cream by 20 g.
Flour. We take ordinary flour of the highest grade with a protein of about 10 g per 100 g. Strong bread flour is not suitable for this recipe.
Eggs. The size of the egg is C–1 or M. Such an egg weighs about 55 g. For the recipe, take eggs at room temperature. If you don't have enough time for the eggs to heat up while lying on the table, put them in a bowl of hot tap water for 15 minutes.
Sour cream. Fat content in this case is not very important. Depending on the situation, you can replace it with yogurt or kefir. In the latter case, you will need a little more flour.
Sugar. Ordinary white sugar is used for the dough. To caramelize bananas, I used brown sugar to enhance the caramel flavor, but by and large, you can also use regular white sugar.
We proceed to cooking.
For the dough, combine the egg, sugar, vegetable oil, sour cream. Beat with a whisk until smooth.
Add the flour sifted with baking soda and baking powder, knead the dough.
Bananas are cut into halves lengthwise.
At the bottom of the all-in-one mold, we lay a circle of parchment so that it fits slightly on the walls. We put the mold on the stove, put the butter on the parchment and melt it. Evenly pour in the brown sugar.
We put the bananas slices down. Keep on fire for a minute, then remove the mold from the heat.
Pour the dough on top and smooth it out.
We send it to a preheated 180 degree oven and bake until a toothpick is dry, about 30-35 minutes.
Remove the pie from the oven and flip it onto a plate. Remove the parchment.
Serve the pie warm with a scoop of ice cream or cool completely.
