      Sift the flour with baking soda and salt.

      Beat the butter with sugar and lemon zest to a creamy consistency.

      Add the eggs one at a time, beating well after each one. Add half of the flour and knead until smooth. Add the sour cream and knead again. Then add the remaining flour and knead. At the end, add the lemon juice and knead.

      We put the dough in the molds (if you do not use paper liners, you need to lubricate the molds with butter). We send it to a preheated 180 degree oven and bake until a dry match, about 25 minutes. Cool it down.

      We prepare the meringue. In a bowl, mix the proteins with sugar. We put it in a water bath and, stirring constantly, bring it to a temperature of 50-60 degrees.

      We begin to beat with a mixer. Beat until stiff peaks form.

      We put the meringue in a pastry bag with a star attachment and spread the meringue on the cupcakes.

      We send it to an oven preheated to 200 degrees and bake for about 5-7 minutes (the time may be longer due to the specifics of a particular oven). The meringue should be browned and crispy on the outside.

      Let the cupcakes cool to room temperature and serve.
