Pour the milk into the bowl of the mixer. Add sugar and yeast, stir.
Add flour and knead the dough – it may be a little tight.
We leave it to rest for 20-30 minutes. Then stir in the salt and butter. You should get a smooth dough. In the kitchen machine at this stage, I knead with a hook for about 10 minutes.
We leave the dough to rise, covering the bowl with a plate or cling film. The dough should double in volume – it will take about an hour or two, depending on the temperature in the kitchen. We knead the dough that has come up, put it on a board and divide it into equal parts.
We form buns. Each piece is rolled into a flatbread.
We roll it into rolls, we pinch the seams.
We put the blanks on a baking sheet with the seam facing down. Lubricate with beaten egg. We cut it with a very sharp knife or blade. Let it stand for 30-40 minutes until the volume increases.
We send it to the oven preheated to 220 degrees and bake until it is ready and ruddy, about 15 minutes.
Remove, cool and serve.
