Cut each fillet into 2 pieces. Cut the onion into thin slices, tomatoes into 2-4 pieces, depending on the size. Finely chop garlic and basil. Olives are cut into 2-4 pieces.
Heat 2 tablespoons of vegetable oil in a frying pan over medium-high heat. Salt and pepper the fish, fry in several batches until cooked on both sides, about a minute and a half per side.
Transfer to a plate.
Add the onion to the pan and fry, stirring, for 2-3 minutes. Add the tomatoes and cook, stirring, for another 3 minutes.
Add garlic and olives, pour in the wine and cook for about 5 minutes, until the smell of alcohol disappears. If necessary, adjust the taste with sugar.
We put the fish in the pan, warm it up for a couple of minutes.
We are serving.
