Prepare the dough. To do this, put flour, salt, sugar and cold butter cut into cubes into the bowl of a food processor. Pulse until the mixture resembles coarse crumbs. Pour in the water and mix the dough as quickly as possible. Do not knead for too long, otherwise the butter will melt and the dough will become tough. Form the dough into a ball, wrap in plastic wrap and place in the refrigerator for 30–40 minutes.
Roll the chilled dough into a sheet about 3 mm thick. Use a cutter to cut out rounds a couple of centimeters larger than the diameter of the tartlet molds. Press them into the molds. Prick with a fork, cover with foil and fill each with beans.
Bake in an oven preheated to 180°C for 10 minutes. Then remove, take off the foil and beans, and return to the oven for another 5 minutes. Remove from the molds and place on a baking sheet.
Slice the onion into half-rings. Fry in vegetable oil over medium heat until golden, about 5–6 minutes. Cut the ham into small cubes. Put into a bowl, add the fried onion and mix.
For the custard, whisk together the sour cream and eggs. Season with salt to taste. Put the ham mixture into the tartlet shells, pour a couple of tablespoons of the custard into each.
Bake in an oven preheated to 200°C until the custard sets and is lightly browned, about 20 minutes. Serve warm or completely cooled. They taste better warm 😉
