Notes on ingredients:
Flour. Since the dough in this recipe is shortcrust, you need a weak (low-protein) flour. Regular all-purpose flour with about 10% protein is suitable. Even better is cake flour with 8–9% protein. With stronger bread flour the dough will turn out tougher.
Butter. In this case it’s better to use butter with 80% fat or higher. It will make the dough crisper than butter with lower fat content.
Sugar. For both the dough and the coating you can use white or brown sugar, your choice. The main difference is that brown sugar will give the cookies a beige tint and a slight caramel flavor.
Eggs. This recipe uses a medium egg – about 50–55 g without the shell. It’s better if the egg is at room temperature before adding to the dough. If your eggs are refrigerated, you can warm them slightly by placing them in hot tap water.
Lemon. You can play with flavors here and, if you like, substitute orange juice and zest for the lemon. You’ll get a delicious orange variation of these cookies.
Let’s move on to the preparation.
Beat the butter with the sugar until creamy. Add the zest, lemon juice and the egg, and beat again.
Add the flour sifted with baking soda and salt and knead a soft dough. Reminder: the amount of flour may be more or less than stated, so add it gradually and watch the consistency.
Cover the bowl with plastic wrap and refrigerate for at least half an hour.
Remove the dough, portion out small amounts with a tablespoon and form balls the size of a large walnut. Roll them in sugar.
Place on a baking sheet and lightly flatten. Put into a preheated oven at 160°C and bake until the edges are golden, about 15 minutes.
