      Chicken. Boneless leg or thigh fillet works best for this recipe. That meat always turns out tender and juicy. Alternatively, you can make this chili with turkey thigh fillet. That will also be very tasty, but will require a little more time to braise until tender.

      Beans. The variety of beans is not particularly important here. I used white; you can use red, speckled—any. I find canned beans most convenient, but if you prefer you can soak and cook dried beans.

      Onion. Ordinary yellow onion will be more than enough. Red is less suitable because it will stand out in color, but if that doesn't bother you, you can use it.

      Garlic. Use fresh. Dried will not provide the necessary flavor intensity.

      Hot pepper. An essential ingredient—without it chili isn't chili. This recipe uses both fresh chili and pickled jalapeños. Both are used in moderation here. If you don't have pickled peppers, you can add more fresh pepper.

      Broth. I recommend using broth rather than water—the flavor will be noticeably fuller and richer.

      Now let's move on to cooking.

      Cut the chicken into small pieces.

      In a sauté pan over high heat, heat 2 tbsp vegetable oil. In 2–3 batches, stirring, fry the chicken until golden, about 5 minutes per batch. Transfer to a plate.

      Put the peppers, garlic and onion into a blender.

      Chop not too finely.

      Reduce the heat under the pan to medium. Add the chopped pepper-and-onion mixture and fry, stirring, for 3–4 minutes. Add cumin and fry, stirring, for 1 minute. Add the flour and fry, stirring, for another 1 minute.

      Gradually, stirring constantly, pour in the broth and bring to a boil. Salt to taste.

      Add the chicken and beans to the pan.

      Simmer, covered, over medium heat for 10 minutes.

      Serve with mashed potatoes. If desired, sprinkle with grated cheese.
